Every time I look at a slice of this bread, a bright smile ripples across my face like lightning tearing across the night sky! It’s true, smiles are contagious!
This bread’s got a million dollar smile and a taste to match!
As you know, this week we decided to create our own recipes. This was not as innovative as the idea suggests. What we in fact did was adapt an existing, tried and true recipe with a few additions or subtractions of our own! It was all a matter of mathematics really!!
So what did I do? Well, I had lots of delicious raspberry topping left over from the cheesecake we made a few weeks ago and decided to give it second life! I used this Glazed Lemon Bundt Cake as a base recipe and basically poured half the batter into the loaf tin, then spooned a layer of raspberry topping in a straight line down the middle, and topped it with the remaining batter! The effect, well, have a look at the pictures and see for yourself!
1 cup yogurt of your choice instead of the milk (I used mango, passion fruit and papaya)
1/4 cup lemon juice straight into the batter, yum!
